Baked taquitos are one of my absolute favorite things to make – and eat! Roll just about anything into a tortilla (chicken and spinach? buffalo chicken?), add a little cheese, and bake it until it’s crisp and it’s pretty much guaranteed to be awesome.

These summer vegetable taquitos are my favorite version yet, and I’m so excited that I can finally share them with you! It’s perfect timing, too: summer product is at its peak right now, and these really take advantage of all those vegetables and highlight it in a new way.

Plus, if you’re up to your ears in zucchini, this will take two of them off your hards. That’s right – no need for zucchini bread this week!

(You can also adjust the filling based on whatever vegetables are in season. In the winter, try substituting mushroom and kale for the zucchini and spinach.)

I still remember the first time I ate fish tacos, way back when I lived in DC. I had seen them in an advertisement and decided that I absolutely had to have them for lunch. I walked about three-quarters of a mile (in heels!) to the place that had them and put in my order. After waiting for what felt like forever, I was presented with greasy fried fish in gummy tortillas. So disappointing. Totally not worth the achy feet (or the $10).

Thankfully, that was several years ago so I’ve had lots of time to perfect my own recipe. These tacos are nothing like those other ones. Instead of being heavy and greasy, they’re light and fresh. The fish is marinated in a mix of citrus juices and spices and then grilled. Stuff that into some grilled flour tortillas and top it with spicy pickled onions (one of my favorite condiments ever) and salsa verde for a simple, fresh meal that reminds me of the beach.

Happy Cinco de Mayo! This is one of my favorite holidays, for no reason other than it give me an excuse to eat Mexican food and drink margaritas. What’s not to love?

By this point, you probably already have your menu planned out. But if you don’t, or if you’re looking to add something extra, you should definitely give this grilled corn with lime-cayenne butter a try. Grilled corn on the cob is one of my absolute favorite summertime treats. It’s so easy (you can grilled it right in the husk!) and the grill gives it a subtle smokey-charred flavor that I love. I usually just eat it plain, but for a special treat this lime-cayenne butter is awesome. It had just the right amount of heat to make the corn seem even sweeter.

On a side note, I’m going to try switching up my posting schedule. I’ve been posting new recipes on Monday, Wednesday, and Friday for a long time, but I’ve been thinking about trying out a Sunday, Tuesday, Thursday schedule for a while. I think it will work better with my schedule. As an added bonus, it lets me participate in Sunday Supper – a weekly blogging event focused on sitting down at the table for a meal at least once a week. Grilled Corn with Lime-Cayenne Butter

Keeping a thin layer of husk on the corn prevents it from burning over the high heat of the grill. If you're using corn that has the husk removed, wrap each cob in a piece of tin foil before putting it on the grill.

Ingredients

  • 4 ears corn on the cob
  • 1 tablespoon unsalted butter softened
  • ½ lime zested and juiced
  • tsp cayenne pepper
  • 1 generous pinch sea salt

Instructions

  • Heat grill to high. Remove all but 1 or 2 layers of corn husks (you'll be able to feel and possibly even see the kernels – that's ok!) Place the corn on the grill; cover and cook 10 minutes or until husks are charred. Remove from heat and let cool.
  • While the corn is cooking, combine the butter, lime juice and zest, cayenne pepper, and salt. Mix well to combine.
  • When corn is cool enough to handle, peel back the remaining husks and remove the silk (it should come off very easily). If desired, place corn back in the grill for 1-2 minutes to give it some color. Serve with lime-cayenne butter.

“Doritos Locos” Taco Bake

Doritos Locos Taco Bake. Yup, I went there.

And you know what? I don’t regret it at all.  Those folks at Taco Bell were really onto something.

I’ll be honest – Taco Bell totally grosses me out. I stopped eating there long before the whole “our meat isn’t even meat” scandal and I don’t  have plans to start any time soon. But I just had to see what all the fuss about Doritos Locos Tacos was about, so I took matters into my own hands.

Taco bake is one of my most popular recipes, and all it took were a few small tweaks to give it a new look and feel. WOW. Where has this been all my life?
