Soup season is here! Soup season is here!

This creamy Thai corn chowder is the perfect way to bridge the gap between summer and fall. It has a fresh, almost floral flavor that highlights the last of summer’s sweet corn, and a thick velvety texture that’s super cozy and luxurious. I love it! And I love it even more knowing that it can be on the table in just about a half an hour (and that 20 minutes of that it just simmering the broth!)

I still remember the first time I ate fish tacos, way back when I lived in DC. I had seen them in an advertisement and decided that I absolutely had to have them for lunch. I walked about three-quarters of a mile (in heels!) to the place that had them and put in my order. After waiting for what felt like forever, I was presented with greasy fried fish in gummy tortillas. So disappointing. Totally not worth the achy feet (or the $10).

Thankfully, that was several years ago so I’ve had lots of time to perfect my own recipe. These tacos are nothing like those other ones. Instead of being heavy and greasy, they’re light and fresh. The fish is marinated in a mix of citrus juices and spices and then grilled. Stuff that into some grilled flour tortillas and top it with spicy pickled onions (one of my favorite condiments ever) and salsa verde for a simple, fresh meal that reminds me of the beach.

I might have a problem: I might be a little sriracha-obsessed. That bottle up there? I bought it last week and it’s already almond have gone. I’ve been finding ways to sneak it into things left and right. When I originally came up with the idea for this salad, I envisioned a creamy avocado-lime dressing. You see how that turned out, right? No avocado in sight; instead, I dressed it with a spicy mixture of yogurt, sriracha, and lime juice. And I don’t regret it for a second, because the dressing kind of made the salad.

A few weeks ago, Shawn and I went to Red Lobster to grab a quick dinner before we saw a movie. I spent all day thinking about how excited I was to get the coconut shrimp, which I haven’t eaten in years. Then we got there and I looked at the menu. 880 calories before you even start thinking about sides? I don’t think so!

I ended up getting the garlic-grilled shrimp, which were a much more reasonable 370 calories (and were really tasty – I recommend them!) but I couldn’t get those coconut shrimp out of my head. So I made them myself. And healthified them, of course.

It takes a lot to get me to eat a salad in the winter. Soup? Sign me up. Salad? Maybe another day….

Of course, if you load a salad up with lots of delicious, hearty toppings it’s hard to pass up – even when there’s three feet of snow on the ground.

I absolutely adore everything about this soup. Despite the fact that it’s totally healthy, it’s luxuriously rich and creamy and is the perfect way to warm up on a cold day. Top it off with shrimp cooked in spicy piri piri sauce and you have a meal that’s just about perfect in every way.

Two-Minute Salmon Terryaki

I saw this salmon teriyaki over on The Kitchn a few weeks ago and immediately ran to the store to get the ingredients to make it. I’m so glad that I did, because now not only do I have a new go-to weeknight recipe, I have a fail-proof new way to cook fish! I feel like this photo doesn’t do the recipe justice at all; the salmon is incredibly succulent and falls apart into big, tender flakes with a gentle tap with your fork. Served over rice it doesn’t look like much, but we’re still talking about it weeks later and I can’t wait to make it again.

Rather than cooking this salmon on the stovetop or roasting it, you cook it very quickly under the broiler – it literally only takes 2 minutes!
