Crunchy Salmon Salad with Sriracha Dressing 1

Crunchy Salmon Salad with Sriracha Dressing

I might have a problem: I might be a little sriracha-obsessed. That bottle up there? I bought it last week and it’s already almond have gone. I’ve been finding ways to sneak it into things left and right. When I originally came up with the idea for this salad, I envisioned a creamy avocado-lime dressing. You see how that turned out, right? No avocado in sight; instead, I dressed it with a spicy mixture of yogurt, sriracha, and lime juice. And I don’t regret it for a second, because the dressing kind of made the salad.

Two-Minute Salmon Terryaki 2

Two-Minute Salmon Terryaki

I saw this salmon teriyaki over on The Kitchn a few weeks ago and immediately ran to the store to get the ingredients to make it. I’m so glad that I did, because now not only do I have a new go-to weeknight recipe, I have a fail-proof new way to cook fish! I feel like this photo doesn’t do the recipe justice at all; the salmon is incredibly succulent and falls apart into big, tender flakes with a gentle tap with your fork. Served over rice it doesn’t look like much, but we’re still talking about it weeks later and I can’t wait to make it again.

Rather than cooking this salmon on the stovetop or roasting it, you cook it very quickly under the broiler – it literally only takes 2 minutes!

Smoked Salmon and Potato Frittata 3

Smoked Salmon and Potato Frittata

Lately, I’ve been using up a lot of my culinary creativity on freelance projects.  One of my favorites are these potato and smoked salmon pancakes with creamy dill sauce that I created for Eat Better America last month. I ate them every day for a week and still wasn’t tired of them. They were crispy on the outside, creamy on the inside, and the smoked salmon went perfectly with potato.

When I found myself with extra egg whites after making a batch of grapefruit curd the other day, I decided to make a frittata using the same flavors as those pancakes. While it was a little less elegant than the potato pancakes, it was just as luxurious. Plus, it was quick and easy – a combination that can’t be beat!

The Best of 2009

I don’t know about you, but after indulging so much over the holiday I’m more than ready to get back to eating healthy, nutritious foods. I’ve been cooking up a storm in the kitchen and have a few great new recipes to share with you. But first I thought it would be appropriate to reflect back on some of my favorite recipes from the past year. I’ve made more than a few great dishes since I got serious about blogging last winter and it seems like a shame to let them get lost in the archives.

So to help you start the New Year off on the right foot, here’s a roundup of some of the most crave-worthy recipes that have appeared on Healthy.Delicious. in 2009. This list certainly doesn’t represent all of my favorites (if I don’t absolutely love something that I make, I generally don’t post it) but they are some of the healthier recipes that I keep going back to and that you can realistically make during this time of the year. I had some fabulous recipes over the summer, but they just wouldn’t be the same without fresh, in-season produce.

Here’s to a great New Year full of healthy and delicious meals, good friends both new and old, and success in and out of the kitchen! If you had to pick one meal as your favorite of 2009, what would it be?
