Curried Chicken Noodle Soup

Ingredients

  • 1 tablespoon olive oil
  • ½ onion finely diced
  • 4 garlic cloves minced
  • 1 tablespoon grated ginger
  • 4 cups chicken broth
  • 1 cup canned coconut milk
  • 1 teaspoon red curry paste
  • ½ teaspoon turmeric
  • 1 lime juiced
  • ½ pound boneless skinless chicken breast, cut into bite-sized pieces
  • 12 ounces Reames homestyle egg noodles
  • 1 cup peas
  • 2 carrots peeled into ribbons
  • Cilantro

Instructions

  • Heat the oil in a large soup pot set over medium heat. Add the onion, garlic, and ginger; cook 5 minutes, or until soft and fragrant. Stir in the broth, coconut milk, curry paste, turmeric, and lime juice.
  • Add the chicken and egg noodles. Simmer 20 minutes, stirring frequently. Season to taste with salt.
  • Stir in the peas and carrots. Ladle into bowls and top with cilantro.
