delicata squash  carrots  avocado oil or other high-heat neutral oil maple syrup miso paste unsalted butter  rice wine vinegar cayenne pepper (optional)

Peel the squash and remove seeds. Then cut the squash and carrots.

Mix together the maple syrup, miso, rice wine vinegar, and cayenne. Then coat the carrots and squash.

Spread onto a baking sheet or roasting pan in a single layer. Scatter the butter over the top.

Bake until the squash and carrots are tender and caramelized. Then broil on high for 4-5 minutes .

Season to taste with a pinch of flaky sea salt.
