  • 1 sweet potato peeled and chopped (about 1 pound)
  • 1 yellow bell pepper chopped
  • 1 red onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 cans fire-roasted diced tomatoes
  • 3 cups vegetable broth
  • 2 cans black beans drained and rinsed
  • ½ cup quinoa rinsed
  • 1 tablespoon chili powder
  • 1 tablespoon unsweetened cocoa powder
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon smoked paprika
  • teaspoon cayenne
  • 1 teaspoon kosher salt


  • Add of the ingredients to the slow cooker and stir to combine.
  • Cook on high for 4 hours or low for 7 to 8 hours.
  • Spoon into bowls and garnish as desired.
