Pumpkin Spice Latte Baked Oats

Pumpkin spice latte baked oatmeal is the perfect way to start your morning. It’s packed with all the flavor of your favorite fall drink but in the form of a healthy breakfast cake! It takes just under 5 minutes to make in the microwave each morning, or you can bake a bigger batch in the oven and enjoy it all week.

Ingredients

  • ¼ cup cold brew coffee
  • ¼ cup pumpkin puree
  • 1 large egg
  • ½ cup rolled oats
  • 1 tablespoon maple syrup
  • 1 teaspoon pumpkin spice
  • ¼ teaspoon baking powder
  • pinch salt

Instructions

  • Spray an 8-ounce ramekin or small baking dish with cooking spray.
  • Add the ingredients to a blender in the order listed. Cover and blend on high until smooth, about 30 seconds.
  • Pour the batter into the prepared ramekin. Bake at 350°F for 25 minutes OR microwave for 2-3 minutes. You'll know when it's done when the sides will pull away from the edge of the dish and the top looks dry.
  • Optional: Dust with pumpkin spice and top with a dollop of whipped cream
