Cauliflower Tabbouleh

Ingredients

  • ½ cup cauliflower rice
  • 1 medium tomato diced
  • ½ cucumber diced (about 1/2 cup)
  • ½ cup fresh parsley finely chopped
  • ¼ cup fresh mint finely chopped
  • 4 green onions thinly sliced
  • 3 tablespoons olive oil
  • 1 lemon juiced
  • ¼ teaspoon sea salt

Instructions

  • Add all of the ingredients in a mixing bowl. Stir well to combine.
  • Cover and refrigerate for at least 1 hour. Add additional salt to taste.
