Instructions
Add 1/4 cup oats to your blender container. Cover and blend on medium speed until the oats turn into a soft powder.
Transfer the oat flour to a mixing bowl. Add the remaining 1/4 cup oats, cashew butter, protein powder, vanilla and almond extracts, lemon zest, and salt. Mix well, adding enough coconut milk to form a dough.
Roll the dough into teaspoon-sized balls. Roll each ball in sprinkles.
