No-Bake Birthday Cake Energy Bites

Ingredients

  • ½ cup rolled oats divided
  • ¼ cup cashew butter
  • 1 scoop vanilla protein powder I use 365 whey protein
  • teaspoons almond extract
  • teaspoons vanilla extract
  • ½ lemon zested
  • 1 pinch salt
  • 1-2 teaspoons unsweetened coconut milk
  • 2-3 tablespoons sprinkles

Instructions

  • Add 1/4 cup oats to your blender container. Cover and blend on medium speed until the oats turn into a soft powder.
  • Transfer the oat flour to a mixing bowl. Add the remaining 1/4 cup oats, cashew butter, protein powder, vanilla and almond extracts, lemon zest, and salt. Mix well, adding enough coconut milk to form a dough.
  • Roll the dough into teaspoon-sized balls. Roll each ball in sprinkles.
  • Store in the refrigerator.
