Hydrating Fruit Salad

Ingredients

  • ½ small seedless watermelon chopped (about 6 cups)
  • 1 pint strawberries quartered
  • ½ pint blueberries
  • 3 Persian cucumbers or 1 seedless cucumber, sliced
  • 1 lime juiced
  • 1 tablespoon honey
  • 2 tablespoons chopped fresh mint
  • 1 pinch salt optional

Instructions

  • Combine the fruit in a large bowl.
  • In a small bowl, whisk together the lime juice, honey, fresh mint, and salt (if using). Pour over the fruit and toss to combine.
  • Refrigerate 1 hour, or until thoroughly chilled.

Notes

Add 1 cup fruit salad to a pitcher and cover with sparkling water for a refreshing drink!
