Ingredients

  • 1 can 15.9 ounce can black beans, rinsed and drained
  • 1 can 15.9 ounce pinto beans, rinsed and drained
  • 1 can 15.9 ounce fire roasted tomatoes
  • 1 can 15.9 ounce pumpkin puree
  • 2. ½ cups vegetable broth
  • 1 cup brown lentils dry
  • 1 onion minced
  • 1 green bell pepper diced
  • 1 carrot peeled and diced
  • 2 garlic cloves minced
  • 2 Tablespoons chili powder
  • 1 teaspoon ground chipotle chili pepper optional
  • ½ teaspoon kosher salt

Instructions

  • Combine all ingredients except salt in the slow cooker. Stir well.
  • Cover and cook on Low for 8 hours. Stir in the salt. Adjust seasoning to taste.
