Instructions
Heat the oil in a large soup pot set over medium heat. Add the onion, garlic, and ginger; cook 5 minutes, or until soft and fragrant. Stir in the broth, coconut milk, curry paste, turmeric, and lime juice.
Add the chicken and egg noodles. Simmer 20 minutes, stirring frequently. Season to taste with salt.
Stir in the peas and carrots. Ladle into bowls and top with cilantro.
