Chili Rubbed Pork Loin with Apple Salsa (Gluten Free)

Ingredients

  • 1 package McCormick Gluten-Free Chili Seasoning Mix
  • 1 tablespoon brown sugar
  • 1 apple diced
  • ¼ cup finely chopped red onion
  • ¼ cup fresh cranberries halved
  • 1 tablespoon honey
  • 1 lime juiced
  • 1 tablespoon freshly chopped cilantro
  • 2 pork tenderloins 1 pound each
  • 1 tablespoon oil

Instructions

  • In a small bowl, combine chili seasoning mix and sugar. In a medium bowl, mix the apple, cranberries, onion, honey, lime juice, cilantro and 1 teaspoon of the seasoning mixture. Cover and refrigerate until ready to serve.
  • Brush pork tenderloins with oil. Coat evenly with remaining seasoning mixture.
  • Heat oven to 400ºF.
  • Place the pork tenderloins on a foil-lined baking sheet lined. Bake for 20-25 minutes, or until the pork reaches an internal temperature of 145ºF. Remove from oven and let rest for at least 5 minutes.
  • Serve with apple salsa.
