Taco Veggie Burgers

These black bean and brown rice veggie burgers get a zesty kick from gluten free taco seasoning. Load them up with your favorite taco toppings for an easy weeknight fiesta! Ingredients

  • 1 carrot finely chopped
  • 1 small onion finely chopped
  • 1 cup cooked brown rice
  • ¾ cup black beans rinsed and drained
  • 1 packet McCormick® gluten free taco seasoning
  • 2 ounces cheddar cheese optional
  • 4 gluten free rolls split
  • 2 tablespoons sour cream
  • 1 teaspoon taco sauce
  • ½ avocado lightly mashed
  • 4 slices of tomato

Instructions

  • Add the carrot and onion to a large, nonstick pan set over medium-high heat. Cook 3-4 minutes, or until soft.
  • Add the cooked vegetables, rice, beans and taco seasoning to a food processor or blender. Process 10-15 seconds, or until the mixture comes together in a ball. Divide into 4 patties. (At this point, you can refrigerate the patties, if desired.)
  • Cook over medium-high heat for 5 minutes on each side. If desired, top with cheese and cover for the last 2 minutes of cooking.
  • While the veggie burgers cook, mix together the sour cream and taco sauce.
  • To assemble, spread the bottom of each roll with mashed avocado. Top with a veggie burger and tomato slice. Spread the sauce on the top bun, then place on the tomato.
