Granola Crusted French Toast

A smattering of granola gives this French toast a nice crunch. You can customize it by using whatever flavor granola you want, but look for one without dried fruit. I like pecan praline or French vanilla almond.

Ingredients

  • 2 Eggs
  • ½ cup Skim Milk
  • 1 teaspoon Vanilla
  • ½ teaspoon Cinnamon
  • LAND O LAKES® Butter with Canola Oil
  • 4 slices Texas Toast or other thick white bread
  • 1 cup Granola
  • Maple Syrup for serving

Instructions

  • In a wide, shallow dish, beat together the eggs, milk, vanilla, and cinnamon to form a thin custard.
  • Melt 1 tablespoon butter on griddle set over medium heat.
  • Soak the bread in the custard for 3-5 seconds on each side, until it's soaked through but not soggy; place on hot griddle. Sprinkle with granola; press down gently with a spatula to help the granola stick. Cook 5 minutes, or until golden brown. Flip and cook 3 minutes.
  • Serve with maple syrup and butter.

Notes

If you need to cook the French toast in batches, keep it warm in a 200F oven until you're ready to serve it.
