Slow Cooker Sweet Potato Quinoa Chili

1 sweet potato peeled and chopped (about 1 pound) 1 yellow bell pepper chopped 1 red onion chopped 4 cloves garlic minced 2 tablespoons tomato paste 2 cans fire-roasted diced tomatoes 3 cups vegetable broth 2 cans black beans drained and rinsed ½ cup quinoa rinsed 1 tablespoon chili powder 1 tablespoon unsweetened cocoa powder 1 ½ teaspoons ground cumin ½ teaspoon smoked paprika ⅛ teaspoon cayenne 1 teaspoon kosher salt
Add of the ingredients to the slow cooker and stir to combine.
Cook on high for 4 hours or low for 7 to 8 hours.
Spoon into bowls and garnish as desired.
