Herby Greek Yogurt Dip

Ingredients

  • 1 cup plain nonfat Greek yogurt
  • 1 lime juiced
  • ½ teaspoon curry powder
  • Salt and pepper
  • ½ jalapeno pepper seeded and minced
  • ½ cup cilantro
  • 5 mint leaves
  • 2 Tablespoons extra virgin olive oil

Instructions

  • In a serving bowl, mix together the yogurt, lime juice, and curry powder. Season with salt and pepper.
  • Add the jalapeno, cilantro, mint, and 1 tablespoon olive oil to a small blender or food processor. Pulse several times until combined into a chunky pesto. Season to taste with salt.
  • Swirl the pesto into the yogurt; drizzle with remaining olive oil.
