Anolon recently invited me to join their #GoCook campaign and create an “on the go” recipe that will help people squeeze every last bit of fun out of summer. I have to admit, I did a little bit of a double-take. Last bit of fun? Summer just started, right? Then I looked at the calendar. Is it really the end of July already? I don’t even know how that’s possible. I obviously need to get on the summer fun bandwagon. This weekend, I have one goal: to park myself next to a body of water for a few hours and have a picnic.

For me, the key to a great summer day is getting up and getting out bright and early (before I get distracted by other things, like the internet). A grab-and-go breakfast makes that a lot easier to achieve. These breakfast panini can be made in just about the time it takes to brew a pot of coffee. Pour the coffee into a travel mug, wrap the panini in some parchment, and you’re on your way!

Besides being super fast and easy to make, these panini are totally delicious. I was in the mood for something a little different when I came up with these, so I gave them a Spanish flair and loaded them up with chorizo and red bell peppers. I can’t put into words how good these are. I’m not exaggerating when I say they’re one of the top 5 sandwiches I’ve eaten in my entire life.

You should DEFINITELY make them.

I cooked the filling and fried the eggs in Anolon’s Advanced Bronze 12-Inch Round Griddle and pressed the sandwiches in the Advanced Bronze 11-Inch Grill Pan with Cover. I was really impressed with both pieces. They’re nice and heavy and held the really heat well – I had to turn my stove down to keep things from burning. The nonstick surface released my eggs with no problem at all. I’ve NEVER managed to make eggs and not have them stick to the pan like crazy until now.
