While I was cooking it, I wished I had soe bacon or sausage to add in. It honestly didn’t need it though – and they flavors were so delicate that I would worry about anything to meaty being overpowering. A little bit of pancetta or fried proscuitto might be good, but it might also just seem unnecessary.

I always shy away from warm pasta dishes in the summer because they seem so heavy, but this one was really light and bright. I think it’s because of the lack of red sauce. 🙂

Sometimes you never know what you’ll come up with if you start with a favorite ingredient. The tip about ricotta is a good one to keep in mind. It’s a nice substitute for cream in a sauce.
