No-Bake Birthday Cake Energy Bites

  • 1/2 cup rolled oats, divided
  • 1/4 cup cashew butter
  • 1 scoop vanilla protein powder (I use 365 whey protein)
  • 1/8 teaspoons almond extract
  • 1/8 teaspoons vanilla extract
  • 1/2 lemon, zested
  • 1 pinch salt
  • 1-2 teaspoons unsweetened coconut milk
  • 2-3 tablespoons sprinkles


Add 1/4 cup oats to your blender container. Cover and blend on medium speed until the oats turn into a soft powder.

Transfer the oat flour to a mixing bowl. Add the remaining 1/4 cup oats, cashew butter, protein powder, vanilla and almond extracts, lemon zest, and salt. Mix well, adding enough coconut milk to form a dough.

Roll the dough into teaspoon-sized balls. Roll each ball in sprinkles.

Store in the refrigerator.
