I made this and my son (the future chef) ate 2 slices! I used the ingredients I had on hand, so I deviated from the recipe by using fresh spinach, swiss slices, and fat free milk. I added an extra egg to compensate for the lack of cream. It was delicious and left a few slices for leftovers. Will definitely keep and reuse this recipe!

Frozen chopped spinach is easier, without sacrificing any nutrition . Don't cook/freeze thaw fresh spinach for this. Just cook some fresh spinach you've chopped.

The recipe never mentions when to add the cheese. If you have a glass pie plate, I recommend reducing the temperture by 25 degrees at each step .This is a good recipe.
Nice balance of flavors in this quiche. Only thing I did was prebake the crust. The pie was good without all the cheese seen in other recipes. Will make again!
