					<description><![CDATA[I stumbled onto your blog and was delighted to find a fellow beet risotto fan!  I make all kinds of risottos too, but beet risotto has become my favourite.  Sometimes I grate them in, but when I&#039;m feeling especially patient I&#039;ll roast/steam the beets in a dutch oven and blend them in the food processor with a bit of stock.  Then I spoon them into the risotto while it cooks.  It&#039;s not quick, but the extra flavour from roasting really is something.]]></description>

					<description><![CDATA[I just made a barley risotto last week with red wine, portobello mushrooms, asparagus, and peas.  It was my first time using red wine and barley instead of white wine and arborrio rice.  I was amazed how easy it was!  And the flavors were amazing.  I love the idea of beets and red wine.  I might just have to try that. :)]]></description>
