I've made this recipe several times now - always delicious!! I will say that it always takes me longer than 30 minutes to make, but it's so tasty I don't care. This evening my local grocery store didn't have any fire roasted tomatoes in stock, so I used the equivalent amount of a fire-roasted tomato pasta sauce from a jar. Was a little worried about how the extra moisture from the pasta sauce would affect the finished result, but there were no issues at all. I love the one-pan cleanup, and the recipe makes plenty for leftovers (BIG BONUS!). For my 10 yr old who has a sensitive palate and refuses to eat 'things mixed with other things & sauce', I just give her some of the cooked paprika & oregano seasoned chicken, some extra cut-up chorizo, a dish of peas, and some red pepper strips, so she's getting most of the ingredients in a format that works for her. Thank you for this recipe!

Wonderful! My whole family loved this Paella so the recipe is a keeper. My only changes- I sautéed shrimp and added it at the end with the chicken and peas. Also I didn’t have fire roasted tomatoes so I added a small can of fire roasted green chilis and used extra smoked paprika. I doubled this recipe and have some nice leftovers.

yes, turmeric could work here. It has a slightly different flavor, but would still go well.

Any suggestions for a saffron substitute? This is the only recipe I’ve seen that calls for it (that my family would eat!) and I don’t want to invest in it.
