Hydrating Fruit Salad

Ingredients

  • 1/2 small seedless watermelon, chopped (about 6 cups)
  • 1 pint strawberries, quartered
  • 1/2 pint blueberries
  • 3 Persian cucumbers (or 1 seedless cucumber), sliced
  • 1 lime, juiced
  • 1 tablespoon honey
  • 2 tablespoons chopped fresh mint
  • 1 pinch salt (optional)

Instructions

Combine the fruit in a large bowl.

In a small bowl, whisk together the lime juice, honey, fresh mint, and salt (if using). Pour over the fruit and toss to combine.

Refrigerate 1 hour, or until thoroughly chilled.

Recipe Notes

Add 1 cup fruit salad to a pitcher and cover with sparkling water for a refreshing drink!
