I might have a problem: I might be a little sriracha-obsessed. That bottle up there? I bought it last week and it’s already almond have gone. I’ve been finding ways to sneak it into things left and right. When I originally came up with the idea for this salad, I envisioned a creamy avocado-lime dressing. You see how that turned out, right? No avocado in sight; instead, I dressed it with a spicy mixture of yogurt, sriracha, and lime juice. And I don’t regret it for a second, because the dressing kind of made the salad.

I have a terrible habit of never leaving good enough alone. I always want more. I get greedy.  One of these days I’ll finally learn that some things – like, say, coding a blog – are best left to professionals. I was tinkering around with the site the other day, and I messed things up pretty badly.  Like, I couldn’t access my log in page. And then I attempted to fix it myself and all hell broke loose. The best pizza I’ve ever had was at a little neighborhood restaurant in Paris. It was the kind of place where, rather than letting me order a second glass of wine to meet the credit card minimum, they trusted me to go to the ATM across the street and come back to pay. The pizza, which I later learned is called Pizza Quattro Stagioni (or Four Seasons Pizza), was topped with salty prosciutto, earthy mushrooms, delicate artichoke hearts, and briny kalamata olives.

The days are getting warmer and the sun is setting later – before you know it, soup season will be over! While I’ve had my fill of creamy chowders and stews, I’m not quite ready to say goodbye to soup yet.

Luckily, this spring vegetable soup with pesto is perfect for the warmer weather. It’s light and brothy, with tons of fresh vegetable (like zucchini and green beans) that finally seem right again.

I wish I had a story to tell you about this recipe, but I really don’t. I made it last Saturday, which was rainy and cold. We stayed in and let it simmer all afternoon while we did work around the house – Bolognese is simple to make, but it needs to cook for a few hours in order to thicken up and let the flavors develop. It smelled absolutely amazing while it cooked; we kept wandering into the kitchen to check up on it. It felt like an eternity had passed by the time we sat down to eat, but it was well worth it.

A few weeks ago, Shawn and I went to Red Lobster to grab a quick dinner before we saw a movie. I spent all day thinking about how excited I was to get the coconut shrimp, which I haven’t eaten in years. Then we got there and I looked at the menu. 880 calories before you even start thinking about sides? I don’t think so!

I ended up getting the garlic-grilled shrimp, which were a much more reasonable 370 calories (and were really tasty – I recommend them!) but I couldn’t get those coconut shrimp out of my head. So I made them myself. And healthified them, of course.

Honey + Sriracha Chicken Thighs

It took me a few tries to get this recipe for honey and sriracha chicken just right. I’ll be honest – the first time I tried it, it was downright bad. We each took about two bites of the chicken before tossing it and ordering take-out.   I loved the flavor of the sauce though, and I was determined to make it work. In the end, I’m glad that I persevered because this chicken is delicious and easy enough for even the most hectic weeknight.
