Chorizo Quesadillas with Chipotle Sour Cream


Happy Cinco de Mayo! I don’t now about you, but I’m always up for some good Mexican food.

There’s not really a whole lot to say about this one, because it’s pretty simple. I based it off an appetizer from one of our favorite Mexican restaurants (El Mariachi- I couldnt’ find a web site for them). They actually use a lot of chorizo there- if you don’t care about being healthy, their chorizo burrito is to die for. It’s not something that I usually cook with, because I just ever think of it. While this recipe isn’t very healthy (it’s a celebration!), a little bit of chorizo could easily be used to add a lot of flavor to a dish.

I served this with a side of zesty tortilla soup to round out the meal.

Chorizo Quesadilla with Chipotle Sour Cream

  • ½ link chorizo, diced
  • 2 flour tortillas (fajita size)
  • 4 oz shredded queso quesadilla with jalapeno
  • oil
  • 1/2 cup low fat sour cream
  • 1 tsp chipotle chili powder

Heat chorizo in a medium frying pan so that it crisps up and releases some flavor.

Arrange chorizo and cheese on each tortilla, then fold each tortilla in half. Heat oil in frying pan over medium heat. Add quesadilla and cook, turning once, until tortilla crisps up and cheese melts- about 6 minutes.

Combine sour cream and chili powder.  Serve with quesadillas.

Serves 2.
